I am not a vegetarian, but I don't eat much meat. Quinoa is very versatile, I use it with my oatmeal, quick breads and for dinner. I like how you decided to use ingredients on hand along with the Miller's blend olive oil and the quinoa. Pecans are one of my favorite nuts, one of the staples of my kitchen. You have made a very simple, yet elegant side dish from your pantry.
